Paolo Pescia is perhaps best known as a nomadic beekeeper, truly passionate about his bees and the honeys he carefully harvests from them. While nature sometimes throws a curve and the harvest of the honey is not possible, we delight in the fact that our producers know their terroir well enough to pivot. Dr. Pescia does just that with his extraordinary Tuscan olive oil produced from his family’s estate.
A blend of Frantoio, Moraiolo, Leccino and Pendolino olives, the 2020 oil boasts a rich emerald green color. The aroma has notes of fresh green grass. On the palate, one will recognize flavors of chives, almonds, and green apples. Use this oil liberally, and use it often. Fresh greens, roasted vegetables, white beans; all benefit from a drizzle of Pescia EVOO.
